Why does telling it the size matter so much here?

Because marble veining has its own scale, and that is what a viewer reads the size of the product against. Get it wrong and a ring sits on veining sized for a countertop, which makes the ring look like a bangle. The size chips are enough on their own; the exact measurements sharpen it further.

Will it add a reflection?

Yes - polished marble reflects, so the scene includes a soft reflection and a short contact shadow beneath the product. That is most of what separates a marble render from a product pasted onto a marble photograph.

My product is glass or highly polished. Will that work?

It is the hard case, and worth knowing before you spend a credit. A reflective or transparent product has to show the new background through it and in it, and that is where a generative model is most likely to invent something. Try it at the smallest size first, and expect to generate more than once.
